This has been my lunch and dinner for a few weeks now. LOVE it.
Obviously, it’s super easy to grill up a chicken breast and toss in a salad or over brown rice. But, it’s what you do to season it that makes it good enough to eat daily.
Here’s my go-to meal:
Dice up a chicken breast into small cubes, stir fry in coconut oil. You can season with your favorite seasoning, I use Penzeys Galena Street Chicken Rub.
When finished, toss the chicken over your favorite salad mix OR brown rice. My favorite salad mix is the Trader Joe’s Broccoli Slaw along with some spinach.
The best part of the meal is the dressing. You need to try the Full Circle Organic Honey Mustard dressing (found mine at Byerlys). I’m addicted.
I prepare a few chicken breasts at a time to make meal time even faster!
