Oh, hello Monday – funny how you sneak up on me so quickly. It’s a good thing I was prepared.
Yesterday, I made my grocery list and planned on preparing this yummy vegan chili that I make all fall/winter. It makes eight large servings, so I can eat it all week. AND, I have all my workouts planned for the week along with the weekend plans.
First things first, you need to try this healthy hearty chili recipe. I found it another Minneapolis blogger’s website (Eating for England) and it’s a re-creation of one of the dishes from Lucia’s. Find the recipe here.
Before I made this yummy dish, I got my workout on at Discover Strength. I have declared my love for DS before, you can read about it here. Typically, they like to see you once or twice a week prevent muscle loss. I was working on another training protocol and hadn’t seen them in over a month – however, my strength had still improved. I walked out feeling amazing and happy knowing that all the workouts that I have been doing are giving me continued improvement. See, switching things up is good!
Tomorrow, I visit my favorite hair styling guru, Jeannie, at Salon Lili in Minnetonka (Galleria location is now open). Tomorrow evening is spin at Lifetime and yoga at CorePower Eden Prairie. The rest of the week includes more yoga, barre, circuit training, tennis, and cardio. Before we know it, the weekend will be here. I am going to pay the apple orchard and winery a visit on Sunday! And that’s what I call Sunday Funday.
