As much as I like to have plans and outings scheduled for the weekend, I also like having nothing to do.
Friday night my husband and I went out for cocktails at Kona Grill and then we were off to see the Vikings play. The Vikes even pulled out a win! It is preseason, but hopefully this is what we will see all season.
Saturday, I had an early morning vet appointment for my Lucifer. After I dropped her off, the cleaning bug hit me and I cleaned my house top to bottom. My husband came home from his fantasy football draft party and grilled us some delicious fish and veggies. We had a relaxing night in and did the movie thing.
Today was probably the best Sunday I have had in a long time. I slept in, enjoyed coffee on the deck, laid by the pool and got a workout it. Somehow I talked my hubs into working out with me. I told him if we were going to Lifetime to hit the pool, then we were staying for a workout – and we did. Tonight I cooked – sort of. I made this yummy spicy bean and rice filling for a grilled burrito. I even made my own salsa topping. My husband is actually the one that grilled – but it turned out to be delish. I found the recipe on Pinterest, check it out here. For the salsa, I cut up tomatoes, red onion, cilantro and squeezed some lime juice in. Yum.
It’s going to be an awesome week! I have a couple workouts at STEELE Fitness scheduled, a blowout at The WOW Bar, and I might squeeze in a session at Discover Strength, if time permits – I leave for Seattle on Thursday to see my baby sister.
