It was the soupiest of days today. I am envious of people that can workout in this heat and humidity. I, however, opted to sweat indoors. I found myself at CorePower Yoga for a wonderful flowy vinyasa. It was just what I needed on this Monday. Cardio was also calling my name, so I headed over to Lifetime Fitness to hit the treadmill for 30 minutes. I.Feel.Good.
After double-dippin’ workouts, I was craving something cold, sweet, and refreshing. I found this super easy watermelon sorbet online that I have been dying to try. Today was the day. Believe me, I will never post anything complicated to create. I do not know my way around the kitchen – just ask my husband.
Watermelon Sorbet – would also be absolutely delish as a blended cocktail, just add alcohol.
You will need:
Half of a watermelon – chopped into small chunks and frozen.
1/2 cup (maybe a little more) water or orange juice
If you want added sweetness, just add a squirt of agave syrup.
Get ready to blend. Toss the watermelon and liquid of choice into the blender. Blend the ingredients slowly until it becomes sorbet texture. Add more liquids as needed. I used orange juice for a little extra flavor. You could even add mint leaves for a more refreshing taste.
Eat immediately! This batch will make enough for 3 servings. SO GOOD!

I am looking forward to the rest of the week. I am going through a fitness assessment on Wednesday at Tiger Athletics. This will determine my anaerobic threshold and maximum heart rate, so that I am able to train in appropriate zones. I haven’t been tested in over a year, so I am definitely overdue.
I am also overdue for a trip to Lululemon – I am in need of workout gear. I must make my way over there sometime this week!
